Here in Chicago, winter is long and harsh but once it’s finally safe to put away your heavy coat, it’s time to do a little spring cleaning! For some of us, that means cleaning out our closets, our grill, and maybe our garage but it’s also a great opportunity to cleanse our bodies. One of the best ways to do this is to simply make a salad from fresh dandelion greens. Yes, those resilient “weeds” are actually incredibly good for you! Whenever spring rolls around and I have to weed the garden, I always make sure to save a big bunch of dandelion leaves to use around the kitchen!
Dandelion is one of nature’s best detoxifiers. It’s a fantastic source of many vitamins (A, C, K, E, folate, and B1), minerals (magnesium, zinc, potassium, iron, calcium, and choline), and fiber. We commonly see the dandelion as an ingredient in supplements for healthy skin and liver detoxes.
If you don’t have a garden, dandelion greens can be found at the grocery and can even be foraged–just be sure to wash them well! I like to mix mine with parsley and mint to help balance the plant’s natural bitterness and for additional health benefits. (Parsley and mint are both fantastic “internal deodorants”!) Add some in-season kumquats and soft goat cheese and this dish is as beautiful as it is healthy! Here’s how I make my salad:
JQ’s Spring Cleanse Salad
1 bunch of dandelion greens, roughly chopped or torn
¼ cup chopped parsley
¼ cup chopped mint
1 teaspoon minced shallot
1 teaspoon dijon mustard
1 tablespoon red wine vinegar
3 tablespoon extra virgin olive oil
Salt and fresh ground pepper, to taste
Soft goat cheese (substitute shavings of parmesan, if preferred)
Thinly sliced kumquats
Whisk together the shallot, mustard, and vinegar. Season with salt and pepper to taste. Slowly whisk in the olive oil to emulsify the dressing. Toss the dandelion and fresh herbs in the vinegarette. Top the salad with bits of goat cheese and thinly sliced kumquats and enjoy!
